Born in Paris, Chef Eric honed his skills at the prestigious French Pastry Academy before creating pastries for royalty and celebrities at Le Coq Hardi.

After 25 successful years running his own French restaurant in Los Angeles, Eric has brought his passion and expertise to Santa Fe.

At Madame Matisse, he continues to craft exceptional pastries and French dishes using traditional techniques and the finest ingredients. For Eric, every creation is a work of art, made with love and precision.
